Beef Teriyaki and Vegetable Sushi Dinner

Ingredients

  1. For the salad
  2. 2 Tbsp. light mayonnaise
  3. 1 tsp. rice vinegar
  4. 2 tsp. soy sauce
  5. 1 tsp. finely grated fresh ginger
  6. 1/2 tsp. granulated sugar
  7. 2 1/2 cup coleslaw mix (see note)
  8. For the beef and sushi
  9. 2 Tbsp. vegetable oil
  10. 3/4 lb. sirloin, cut into thin, 2-inch long strips
  11. 1 medium red bell pepper, thinly sliced
  12. 1/2 medium onion, thinly sliced
  13. 1 garlic clove, minced
  14. 1 tsp. freshly grated ginger
  15. 3/4 cup light teriyaki sauce (see note) mixed with:
  1. 1 Tbsp. corn starch
  2. 1/4 cup sake or water
  3. 2 green onions, thinly sliced
  4. 12 to 24 pieces (depending on appetite) vegetable sushi (see Note)
  5. Steamed rice, wasabi, soy sauce and pickled ginger to taste
