Crispy Crusted Oysters with Lime Cilantro Mayonnaise

Ingredients

  1. 16-20 shucked oysters (about 2, 8oz tubs)
  2. 1 cup flour
  3. 2 beaten eggs mixed with 1/4 cup milk
  4. vegetable oil
  5. For the crust combine
  6. 3/4 cup cornmeal
  7. 3/4 cup bread crumbs
  8. pinch cayenne pepper
  9. 1/2 tsp. each salt and black pepper
  10. For the Mayonnaise combine
  11. 1/2 cup mayonnaise
  12. Juice and zest of 1 lime
  13. 2-3 Tbsp chopped fresh cilantro
  14. pinch sugar and cayenne pepper
