Ingredients

  1. 1 1/4 lb. yellow-fleshed potatoes, peeled and quartered
  2. 300 grams fresh or frozen (thawed) cod fillet, patted dry
  3. 1 cup fresh corn kernels (see Note)
  4. 2 to 3 green onions, thinly sliced
  5. 1 large egg, beaten
  6. 1 Tbsp. whole grain Dijon mustard
  7. 1/4 to 1/2 tsp. dried tarragon or dill
  8. 2 Tbsp. all-purpose flour
  9. Salt and white pepper to taste
  10. 1/2 cup dry breadcrumbs
  11. 3 Tbsp. vegetable oil
  12. 8 (1/2) lemon slices for garnish
