Heavenly-spiced Pumpkin Pie

Ingredients

  1. 9-inch deep-dish pie crust
  2. 2 large eggs
  3. 1, 14 oz. can pumpkin
  4. 3/4 cup brown sugar
  5. 1 tsp. ground cinnamon
  6. 1 tsp. ground ginger
  7. 1/4 tsp. ground cardamom
  8. 1/8 tsp. ground cloves
  9. 1/8 tsp. ground nutmeg
  10. 1/4 tsp. salt
  11. 3/4 cup light cream

Method

Preheat oven to 425 degrees F. Beat eggs in large bowl. Stir in remaining ingredients. Pour into pie shell. Bake 15 minutes. Reduce temperature to 350 degrees F and bake for 40 minutes more, or until the pie filling still jiggles slightly in the centre. Cool on a baking rack. Serve with lightly sweetened whipped cream, if desired.

Serving Suggestions

Serve the pie with a dollop of sugar, honey or maple syrup sweetened whipping cream. Or serve it with a scoop of premium, flavoured ice cream, such as ginger or caramel pecan.
