Preheat oven 400 degrees F. Combine first 4 ingredients in a shallow-sided dish. Brush chicken all over with mustard, and then set in breadcrumb/cornmeal mixture. Pack mixture on to chicken to coat. Set coated pieces on a baking sheet and bake 15 minutes. Turn chicken over and cook 15 minutes more. Drizzle top of chicken with honey and bake 5-10 minutes more, or until juices run clear. Serve chicken hot or cold.
