- Heat the 2 Tbsp. oil in large skillet set over medium-high. Add the mushrooms and garlic and cook until the mushrooms are tender, about 5 to 6 minutes. Remove from the heat and set aside.
- Preheat the oven to 400°F. Set the pizza crusts on a work surface and spread with the pizza sauce they came with. Divide and sprinkle the sauce with the Asiago cheese, and then top with the prosciutto, goat cheese and mushrooms. Now set small spoonfuls of pesto at varying points on each pizza.
- Bake the pizzas, one at a time, in the middle of the oven as per package directions, about 10 to 12 minutes, until the crust is crispy and golden brown. If desired, just before slicing and enjoying the pizza, for even more richness, drizzle and sprinkle it with a little oil, balsamic vinegar and chili flakes.
Note: Before using oyster mushrooms, trim off the tough lower part of the stem. Before using shiitake mushrooms remove and discard the very tough stem.
Recipe Options: Try topping the pizza with any other ingredient you think would pair well with other toppings. Roasted red peppers, artichokes and grilled vegetables are some of possibilities.
