  3. 1 Tbsp. olive oil
  4. Juice of 1/2 lemon
  5. 1 tsp. dried thyme leaves
  6. Salt and pepper to taste
  7. For the sauce:
  8. 1 Tbsp. olive oil
  9. 3/4 lb. assorted mushrooms (shiitake, oyster and brown), trimmed and sliced
  10. 1 garlic clove, chopped
  11. 2 Tbsp. flour
  12. 1-1/2 cups chicken or fish stock
  13. 1/2 cup whipping cream
  14. Salt and pepper to taste
