Ingredients

  1. 36 medium cooked, peeled shrimp or prawns (about 2/3 lb/350 g) See Note.
  2. 2 green onions, thinly sliced
  3. 1 ripe mango, peeled, pitted, finely diced
  4. 1 medium tomato, finely diced
  5. 1/4 cup (60 mL) chopped fresh cilantro or mint
  6. 1/4 cup (60 mL) unsweetened medium or large coconut flakes
  7. 2 tbsp (30 mL) lime juice
  8. 2 tbsp (30 mL) orange juice
  9. 1 tsp (5 mL) honey
  10. 1/4 tsp (1 mL) ground coriander
  11. 1/4 tsp (1 mL) ground cumin
  12. pinch salt
  13. 1 head butter lettuce, separated into individual leaves
  14. Sriracha or other hot chili sauce (optional)
