Ingredients

  1. 4 strips bacon, cut, widthwise, into 1/2” strips
  2. 3 Tbsp. extra virgin olive oil, plus some for drizzling
  3. 8 medium white mushrooms
  4. 8 medium brown mushrooms
  5. 8 medium oyster mushrooms, thickly sliced (see Note)
  6. 1 large garlic clove, minced
  7. 1/2 tsp. dried oregano
  8. 1 Tbsp. orange juice
  9. 1 Tbsp. lemon juice
  10. 2 Tbsp. balsamic vinegar, plus some for drizzling
  11. Salt and freshly ground pepper, to taste
  12. 8 cups baby spinach
  13. 3 to 4 medium boiled large eggs, peeled and cut into wedges (see Note)
  14. 100 grams Gorgonzola or other creamy cheese, pulled into small nuggets
