- Preheat oven to 350 degrees F. Line two large baking sheets with parchment paper. Combine cereals and nuts in a large bowl.
- Place the butter, brown sugar, vanilla and cinnamon in a small pot and set over medium-high heat. Bring mixture to a boil for 1 minute, and then pour over the cereal mixture. Mix well until fully coated.
- Divide and spread the cereal mixture on the two baking sheets. Bake one of the sheets for 10 minutes. Stir the cereal mixture and bake 10 minutes more. Remove from oven and let cool. Bake second sheet of cereal mixture as you did the first and cool it too.
- Divide popcorn, cranberries, raisins and M&M’s between the two baking sheets and toss to combine. Store Chex mix in airtight containers until ready to serve in bowls and devour.
Note: 1/4 cup popcorn kernels, popped, will yield the 5 cups needed for this recipe. Dried cranberries, yogurt-covered raisins and M&M’s are sold in our Bulk Foods Department.
Recipe options: Replace pecans or almonds with unsalted, roasted peanuts. Use dried blueberries, instead of cranberries.
