Tequila-Marinated Salmon Steaks with Cherry Tomato and Avocado Salsa

Ingredients

  1. For the salmon:
  2. 4, 6 oz. salmon steaks
  3. 1 Tbsp. olive oil
  4. 3 Tbsp. orange juice
  5. Juice and zest of 1 lime
  6. 1 oz. tequila
  7. 1 Tbsp. finely chopped fresh or canned jalapeno pepper
  8. 1 clove garlic, crushed
  9. For the salsa combine:
  10. 1 ripe, medium avocado, peeled, pitted and cut into small cubes
  11. 8 cherry tomatoes, chopped
  12. 2 Tbsp. olive oil
  13. 2 Tbsp. chopped fresh cilantro
  14. Juice of 1 lime, or to taste
  15. 1/2 tsp. ground cumin
  1. Pinch of cayenne pepper
  2. Salt to taste
