  2. 2 large eggs, beaten
  3. 3 green onions, thinly sliced
  4. 1/2 cup grated carrot
  5. 1/2 cup grated zucchini
  6. 1/2 cup whole wheat bread crumbs
  7. 1/3 cup 2% milk
  8. 1/2 tsp. ground (rubbed) sage
  9. 1 tsp. salt
  10. 1/2 tsp. freshly ground black pepper
  11. Vegetable oil spray
  1. 1 1/4 lb russet potatoes, peeled, 
quartered and rinsed well
  2. 1/4 cup warm milk
  3. 2 Tbsp. melted butter
