  1. 1 1/4 cups quinoa, rinsed in cold water and drained well
  2. 2 cups water
  3. 3 cups peeled and cubed banana or butternut squash (see Note)
  4. 1/4 cup olive oil
  5. 1 tsp. ground cumin
  6. 1 tsp. ground cardamom
  7. 1/4 tsp. cayenne pepper
  8. 1/4 tsp. ground nutmeg
  9. 1/4 cup orange juice
  10. 2 Tbsp. lime juice
  11. 1 Tbsp. maple syrup
  12. 1 Tbsp. chopped fresh ginger
  13. 1 cup pecan halves
  14. 1/2 cup shelled, unsalted pumpkin seeds
  15. 1/2 cup dried cranberries
  1. 1 cup loosely packed fresh mint or cilantro leaves
  2. Salt and freshly ground black pepper, to taste
