Ingredients

  1. 2 Tbsp. olive oil
  2. 1/2 medium onion, finely diced
  3. 1 small fennel bulb, cored and cut into thin strips
  4. 2 garlic cloves, minced
  5. 2 Tbsp. tomato paste
  6. 1 (14 oz.) can diced tomatoes
  7. 1 (10 oz.) can clam nectar, or 1 1/8 cups chicken stock
  8. 1/2 cup dry white wine
  9. Freshly ground black pepper to taste
  10. 16 spot prawns, peeled with tail portion left intact
  11. 8 large scallops
  12. 3/4 lb. fresh snapper fillet, bones removed, flesh cubed
  13. 1 Tbsp. chopped fresh fennel leaves or parsley
