  7. 3 cups peeled and cubed ripe mango (about 2 to 3, depending on size)
  8. 1/2 cup unsalted, roasted cashews (see Note)
  9. 10 cherry tomatoes, quartered
  10. 1/2 medium green bell pepper, diced
  11. 1/3 cup red onion, finely chopped
  12. 1/4 cup fresh mint or cilantro, chopped
