Combine the oats and buttermilk in a bowl, cover and let stand 1 hour. Set the oven rack in the middle of the oven. Preheat oven to 350 degrees F. Lightly vegetable spray the slots of your muffin tin. Mix the apple sauce, brown sugar and egg into the oat mixture. Combine the remaining ingredients in another bowl. Mix into the wet mixture until just combined. Divide and spoon the batter in to the muffin tin. Bake 18-20 minutes; or until the muffins springs back when gently touched.
Recipe Options: Substitute some of the dried fruit called for with others that appeal, such as chopped apricots or dates. Of, if you like nuts, replace some of the dried fruit with walnut or pecan pieces. Give the muffins a crunchy-glazed topping by sprinkling them with a little golden brown sugar just before baking.
