Place the soy sauce, orange juice and honey in a small bowl, whisk to combine, and then set aside. Heat the oil in a large skillet over medium-high. Add all remaining ingredients and stir-fry 2 to 3 minutes. Mix in the soy sauce mixture and cook until a lightly thickened sauce forms around the vegetables, about 1 minute. Serve immediately.
Note: To blanch the green beans, cook in boiling water 1 to 2 minutes. Drain well, cool in cold water, and then drain well again.
