Method

  1. Make horseradish sauce by combining the first six ingredients in a small bowl. Cover and refrigerate sauce until needed. Sauce can be made many hours in advance. 
  2. Preheat the oven to 450˚F. Place the prime rib in a roasting pan; season with salt and pepper. Roast for 20 minutes, and then reduce oven temperature to 325˚F. Finish cooking roast to desired doneness, allowing about 20 to 25 minutes per pound for rare to medium rare. Because roasts vary in thickness, to gauge doneness, absolutely always use an instant-read meat thermometer, inserted into the centre of the thickest part of the roast to determine doneness. For a rare roast, remove from the oven when the internal temperature is 120°F to 125°F; 130°F for medium rare; and 140°F for medium. 
  3. When the beef is ready, transfer to a plate, loosely cover, and allow it to rest for 10 to 15 minutes before thinly slicing. Serve the horseradish sauce alongside.
