Preheat your barbecue to medium-high. Brush the salmon with 1 Tbsp. olive oil and season with salt and pepper. Lightly brush the bars of your grill with olive oil. Set the fish on the grill, flesh side down. Grill 3 minutes and then carefully flip over. Turn the heat to low. Spread the top of the fish with salsa; top the salsa with the cheese. Cover and cook 3 to 4 minutes more, or until the salmon is just cooked. Transfer the salmon to plates, sprinkle with cilantro and serve garnished with lime slices.
