Preheat oven to 350 degrees F.
Place the oil in an ovenproof pot over medium-high heat. Season the cubed pork with salt and pepper and coat with the flour. Brown the pork, in batches, and transfer cooked pieces to a bowl. Add the onion, bell pepper, carrot and garlic to the pot and cook 3 minutes. Return the pork to the pot and mix in the remaining ingredients, except parsley. Bring to a simmer. Cover and cook in the oven for 90 minutes, or until pork is tender. Sprinkle servings of the stew with parsley.
