Place the oil in a large skillet set over medium-high heat. Place the pork in a bowl and toss with the salt, pepper and flour. Brown the pork, in batches, and transfer cooked pieces to your slow cooker. Add the onion, bell pepper and garlic to the skillet and cook 3 to 4 minutes. Add the remaining ingredients,
except parsley, bring to a simmer, and then pour the mixture over the pork. Cover and cook on the low setting 6 to 7 seven hours, or until the pork is tender.
Sprinkle servings of the stew with parsley.
