Mix chicken with its listed ingredients and marinate 30 minutes in the fridge. Thread a piece of chicken on the end of each skewer. Preheat grill to medium high heat.
While this occurs, place peanut sauce ingredients in a pot. Stir over medium heat until smooth and thickened, about 5 minutes. (Thin with a little water if necessary).
Cook chicken on a lightly oiled grill 2-3 minutes per side, or until cooked through. Serve peanut sauce alongside for dipping. For a simple dinner serve skewers with stir-fried vegetables and steamed rice.
