Place shrimp in a bowl. Chop enough of the dill to get 2 tsp, reserve the rest to garnish the shrimp. Add chopped dill, mayonnaise, lemon juice, garlic and salt and pepper to taste to the shrimp and mix to combine. Place a small spoonful of shrimp on each cucumber round. Garnish with a slice of red pepper and small sprig of dill.
