Place sliced turkey in a bowl and mix in chili powder, cumin, salt and pepper. Heat 2 Tbsp. of oil in a large non-stick skillet set over medium-high heat. Cook until turkey is cooked through. Remove from heat, cool to room temperature, and then mix in peppers, cheese and cilantro. Place an equal amount of mixture on one half of each tortilla shell. Fold over and gently press down. Heat remaining oil in skillet set over medium heat. Cook quesadillas 2-3 minutes per side, until golden brown and cheese is melted. Cut into wedges and serve with salsa and, if desired, sour cream.
Recipe Options: Sliced, boneless, skinless chicken breast; sliced boneless pork leg or chops; or sliced sirloin steak could replace the turkey. Monterrey jack cheese could replace the cheddar.
