Preheat oven to 350 degrees F. Season pork with salt and pepper, and then coat in flour, shaking off excess. Heat oil in a large skillet set over medium-high heat. Add pork and brown on all sides, then lift out of pan and place in a casserole. Add garlic, onions, carrots and celery to pan and cook 3 to 4 minutes. Add remaining ingredients, except parsley, and bring to a simmer. Season with salt and pepper and then pour over pork. Cover and cook in the oven 90 minutes, or until pork is tender.
