Preheat the oven to 425 degrees F. Place the salmon in a single layer in a baking dish. Drizzle with the lemon juice and 1 Tbsp. of the olive oil. Season with salt and pepper. Cover and bake for 12-15 minutes, or until just cooked through. Cool the salmon to room temperature. Wrap and refrigerate until well chilled. Place the sauce ingredients in a food processor or blender and pulse until smooth. Place salmon on dinner plates. Drizzle sauce over top or serve alongside.
