Best-Ever BBQ Brisket
- Rub brisket generously with your favourite spice rub (make sure it doesn’t contain sugar).
- Lightly char all sides on BBQ. Then wrap in foil.
- Smoke on indirect or low heat (about 110°C/225°F) with the lid closed for 3-4 hours.
- Check for tenderness. Continue cooking, if required, until fully tender and internal temperature reaches 90°C/195°F.
- Unwrap and place directly on a hot grill to crisp edges.
- Brush with BBQ sauce, if desired to finish.
- Let the brisket rest for 10 minutes before slicing and serving.
