Steps
- Soak the desired flavour of wood chips in cold, clean water for at least 30 mins. Drain well.
- Wrap wood chips in aluminum foil and puncture with a fork to create holes on the top side.
- Ignite one side of the grill and place the foil-covered wood chips directly above once desired temperature is achieved.
- Place your protein choice on the opposite side for the indirect cooking method and the lid closed to keep the temperature consistent.
- Smoke for the specified time of your protein choice to reach recommended internal temperature
- Replace wood chip bundle as required if smoker stops. For best results, make sure to season well prior to smoking.
