Fry the bacon until crispy. Drain off the fat, dry the bacon bits on paper towel, and then cool to room temperature.
Combine the bacon and remaining ingredients in a bowl, reserving a tiny bit of the bacon, cheese and green onion for garnish. Refrigerate the dip and garnish until ready to serve. When ready to serve, spoon the dip into a decorative bowl, garnish the top, set on a platter and surround with crisp, raw vegetables for dunking.
